The Tome Alpage de la Vanoise is a French cheese from the area of the French alps. It is made of not pasteurisierter cow's milk. For a Tomme cheese it has an unusually high fat content with 45% fat in the dry weight. For its production only milk of cows, which feast on the Hochalmen of the Vanoise, is used. The taste of the cheese is mild aromatic. The nature mould crust of the cheese flares from red over yellow to violet grey. The cheese, which matures between two to three months, from the late summer is available to the winter.
