Teifi is a cheese from Wales. It is made of cow's milk and has a fat content of approx. 45%. It is similar a unpasteurisierter hard cheese as Gouda and has a sunny-yellow inside. There are different sorts dependent on Teifi on the ripe time. The young Teifi has a fruchtiges flavour, the older becomes hard and The ripe one takes 2-9 months. Sometimes Nesseln or Kumin are added or it are smoked. It was invented by John and Patrice Savage Ontswedder.
