Among the sugar industry enterprises, which concern themselves with the processing of sugar containing vegetable raw materials, rank especially are that the sugar beet and the Zuckerrohr. Conventionally one calls the developing primary products then depending upon the used raw material Rohrzucker and/or Chemically these do not differ.

Occasionally to the sugar industry also enterprises are counted, which build the plants used during the Zuckergewinnung, for example the Zuckerzentrifugen.

The primary final product with the processing of and Rohrzucker in a sugar factory is the crystal sugar (Saccharose), in addition in large quantities as usable by-products molasses and in case of the sugar beet processing is won. In the campaign the harvested sugar beets are transported to the sugar factory and converted there.

In the industrialized countries just like in the countries of the third world approx. 80% of the produced sugar of a commercial use are supplied, are thus not transferred directly as food to final consumers. These sugar quantities are used in particular with the production of food for example into baker's shops, in the sweet goods industry and during the fruit and vegetable processing for and preservation purposes. Also the beverage industry and the pharmaceutical industry use sugars as raw material.

The processing of the residue parts resulting during the Zuckergewinnung becomes increasingly important. While in former times the leached out could be only used as economical feeds approximately for pigs, long valuable contents materials of the sugar beets and the Zuckerrohrs were recognized, which are present in smaller quantities than sugars, however from the residue parts also industrially successfully to be won to be able, for example amino acids and betaine.

The substantial competition pressure on the European and world market led to a strong concentration of the companies involved. While around 1900 the sugar industry consisted alone in Germany still of hundreds of smaller "share sugar companies", which possessed usually only or few sugar factories and frequently to the supplying farmers belonged, these essentially united in the meantime to three larger German societies, i.e. the south sugar AG with seat in Mannheim, the north sugar AG with seat in Braunschweig and the Pfeifer & being enough kg with seat in Cologne. The shares of the north sugars AG belong also today still in accordance with statute predominantly to the farmers, whose sugar beets in the sugar factories of this society are processed.

The sugar factory in Anklam is today in the possession of the Danish Danisco.

Sugar market regulations

In Germany, Austria and Switzerland there is the so-called sugar market regulations. It is European market regulations with regulations for minimum prices for sugar beets and sugar, ratios for quantity adjustment, financial participation of the producers with surplus with the goals: Stable markets, secure supply, appropriate consumer prices, income safety device of the farmers.
