cucumbers g.g.A. are a named-protected speciality from Brandenburg.

Already into the 1870er years found Theodor Fontane, the Spreewaldgurke stand at the point of the agricultural products in the Brandenburger Spreewald:

The Spreewaldprodukte has into its excellent staple and to go only from here into the world. Under these products the cucumbers stand obenan. In one of the previous years on the part of only one dealer 800 shock per week were sold. The secret of the special taste of the Spreewaldgurke remained also for the Fontane hidden. The actual reason of the taste delicate for connoisseurs is to be found however rather in the special kind of its processing. While the fermentation process took several weeks in large barrels in former times in requirement, the cucumbers today already come to only one-day processing into the trade - it is as mustard, spice or sour cucumbers. This enormous saving of time succeed under addition of soda lye by a heating on seventy degrees Celsius. The composition of the further additions however remains also today still another probably-guarded secret that approx. twenty Einlegereien. These taste-improving additions such as Basilikum, Zitronenmelisse, wine, Kirsch or nut sheets give the Spreewaldgurke their special sour, spicy taste.

After the reunification of Germany 1990 the Spreewaldgurke was one of the few GDR products, which were further available without interruption.
