Scientific name
Scorzonera

The Schwarzwurzel (Scorzonera) is a plant kind in the family of the basket bloom plants (Asteraceae), which cover altogether about 100 kinds.

The most well-known kind within the Schwarzwurzel is the "garden black root" (Scorzonera hispanica L.), which is called often also simply "Schwarzwurzel". Like their botanischer name suggest, it comes from the iberischen peninsula, of where out it in 17. Century to Central Europe came. The oblong roots are eaten during the winter months as vegetables, and give to the Schwarzwurzel also the name winter asparagus.

The garden black root is a two-year plant, which develops the root suitable for the consumption in the first year, in order to then arrive in the second year at the bloom. The Schwarzwurzel is considered as nutritious; it contains proteins, of fats, of coal hydrates and mineral of interest in Diabetiker is the fact that coal hydrates in form of the glycoside Inulin are present, which is composed of fruit sugar (Fruktose), and thus of the Diabetiker is more easily usable. With some humans Schwarzwurzeln can release violent blowing. Colloquially it also asparagus of the poor man is called, or in the Ruhr district miner asparagus.
