Quinoa reaches the protection from parasits by tasting bitter Saponine, which are in the seed bowl. These can provoke the intestinal mucosa and damage blood cells, whereby all genes and pollutants can the intestine wall cross and in the blood arrive.
Commercial Quinoa is peeled or washed and thereby entbittert. Unknown is however, which gets over number at Saponinen this procedure. By heating up can be made innocuous into for instance a third of the Saponine possibly remained.
Since the digesting system did not develop with infants yet, the effects of the Saponine are particularly problematic with them. Therefore the German society for nutrition (DGE) advises against with children under two years Quinoa products, because despite the cleaning it cannot be excluded that still traces are contained by Saponinen. These restrictions do not apply to older children and to adults, yet Quinoa under flowing hot water should be washed. Because also for adults they can become dangerous in case of an intestine inflammation, perhaps because they arrive in the blood, can damage the liver and destroy the red blood corpuscles.
