Queso de Burgos is a from sheep milk, which in the Spanish province Burgos is manufactured.

The cheese is not cremig white, softly, and has a very mild taste. Because of its high water content of 64 - 68% are only limited durable the cheese. A loaf weighs 1 - 2 kg, and has no crust is cylindric.

Queso de Burgos is eaten in Spain among other things as dessert as well as a kind Quittengelee (splinter membrillo).
