Mangold (beta vulgaris subsp. vulgaris var. vulgaris), (English "chard ", "swiss chard "or "lack "; fr. "bed ", "blette "or "; it. "bietola (coste there) ") is a vegetable plant. It is a culture form of the carrot, and is related to the sugar beet, the fodder carrot and the beet. It belongs to the family of the fox tail plants (Amaranthaceae).

The Mangold results in a spinach-like vegetable with its langgestielten sheets long to 30 cm. There are numerous sorts with different sheet color (bleach to dark green), the sheets can runzelig or smooth be.

Culture forms

There are two fundamental culture forms of the Mangolds (beta vulgaris subsp. vulgaris var. vulgaris):

  • Handle or rib one gold (beta vulgaris subsp. vulgaris var. vulgaris convar. flavescens), also Roman Mangold mentioned,

is characterised by strongly stepping out central ribs of the sheets. These are eaten including the long handles (therefore it the name handle one gold) as asparagus-like vegetable. The ribs can be white or also reddish. The latters have more strongly aromatic taste. The designation "asparagus of the poor man "is completely unauthorized, since Mangold prepares a delicious summer and autumn vegetable accordingly results in. In the early spring the freshly floating sheets supply with first green vegetable.

  • Cutting or sheet one gold, biting Kohl, Krautstiel or Roman Kohl (beta vulgaris subsp. vulgaris var. vulgaris convar. vulgaris) (Syn.: f. hortensis) again new sheets drive out after cut, which can be harvested again. It is winter hard, floats in spring and can be harvested immediately.

Contents materials

The plant contains extraordinarily much Vitamin K, in addition Vitamin A and E, as well as sodium, magnesium, potassium and Eisen.Die one gold root contain much sugar, which was won in former times, usually by Auskochen, before the Zuckergewinnung from sugar beets replaced this procedure.

Cultivation

General information

The plant is two-year pulled, i.e. the fact that it flowers only in the second vegetation period and produces seeds. They flower only if they were exposed at least one month to long winter temperatures.

Neighbour in the Mischkultur

Plants get along with different neighbour, those directly adjacent grow differently well. For Mangold are:

  • Good neighbours: Shrub bean, leguminous plants generally, Kohl, Radieschen, Rettich
  • Bad neighbours: Spinach.
