The kohlrabi (Brassica oleracea L. convar. acephala (DC.) Alef. var. gongylodes L.) is a vegetable plant, which probably originates from Northern Europe; it is resulted one of the many breed forms of the Kohl, from a crossing from wild Kohl and the wild white carrot.
The tuber used by the kohlrabi is a Verdickung of the branch axle of the Kohl plant, thus no root kohlrabis occurs mostly in lightgreen, sometimes also in red breed forms. A geschmacklicher difference does not exist. To the rearing kohlrabi needs nutrient-rich soil, sufficiently humidity and it grows best in the moderate climate. The largest producer with approximately 40,000 tons annually is Germany, and at the same time also the largest consumer within Europe.
Kohlrabi is both raw and cooked enjoyable. The high ballast material content contributes also to a regulated digesting, nutrients such as selenium, B-Vitamine, Vitamin C, potassium, magnesium and copper makes the low-power tuber (24 kcal/100 g) additionally interesting. However the sheets of the kohlrabi are more nutrient-rich and contained additional Carotinoide (preliminary stage to the Vitamin A).
