Kefalotiri (griech.: is a kind of Greek hard cheese with salty and easily sweet taste. It is used e.g. with the preparation by Bifteki.

Kefalotiri is made of the fresh milk by sheep and goats - separately or also mixed -. For grilled or roasted meals this cheese is ideal, since it melts not much. The well-known Greek/kretische hors-d'oeuvre Saganaki is usually made of Kefalotiri.
