The Jakob number (after max of the Jakobs (1879-1955)) a dimensionless characteristic number is the one temperature difference illustrates. It is defined as

\ mathrm {} = \ frac {\ delta T \, c_p} {h_v}.

The Jakob number plays an important role during the description of phase transitions as e.g. when simmering.
