The gherkin pickled with mustard seeds is a kind of inserted cucumbers. In the peeled condition the cucumber bits with many mustard roughening and spices are inserted, until they developed their typical flavour. Differently than with spice cucumbers or salt cucumbers for it no young, small cucumbers separate large, fully developed copies used. Differently than the otherwise usual unreifen green cucumbers gherkins pickled with mustard seeds have therefore a lightyellow color and a firmer bite. They taste somewhat stronger after than other cucumber specialities.
