Etorki is a sheep milk hard cheese from the French Basque country.
For approx. 4000 years in the French Pyreneeses sheep cheese is manufactured. The Etorki is today a most well-known representative of this tradition. It matures in Salzlake soaked cloths, which gives it a firm, orange crust.
Likes is the Etorki among other things with persons with cow's milk allergy, since it can be used in many prescriptions in place by Gouda or similar cheese places.
