Norway Geitost (also Gjetost) is a semisolid brown cheese from goat milk. This cheese has caramel leagues a taste and is from brown color. It is made not from quark, but of the whey. The whey is in-cooked; the length of the Kochprozesses is decisive for the karamellartigen taste and for the color.
