Cut salad, picking salad or sheet salad (Lactuca sativa var. crispa) is a of the garden salad (Lactuca sativa). Differently than head salad it does not form "heads ", but the sheets are gradually from outside to inside harvested. With salads available in the trade however the whole plant is cut, so that only one harvest is possible.

The sorts can be green to reddish (by the plant dye Anthocyan).

To the most well-known cut salad forms the calibration sheet salad (Lactuca belongs sativa var. acephala) from spring to late summers from cultivation of open land one offers. The sheets are very tender and have a nut-like taste.

Likewise or red sheets has the similar Lollo becomes green bianco and/or to Lollo rosso, it is creased however strong and forms a close head, so that one could regard it as a sort of the head salad.

In the kitchen cut salad is freshly put on such as head salad with Marinade, Mayonnaise or cream as salad.
