When one designates brewery a mechanism, in which compound liquids, usually with the help of the fermentation, are manufactured; strictly speaking brewery marks the place and/or the building (brewing house), at which beer or other fermenting beverages is brewed such as Kriek, Framboise, Lambic or Gueuze. Usually become also enterprises, whose division with priority from beer production and - sales exists, when brewery marks.

There are different types of breweries, which manufacture different sorts beer in different procedures with different degree of automation.

History

Austria Hungary produced 1879 in 2.297 breweries 1.1180.681 Hektoliter beer, against 1878 around 142.763 Hektoliter less. Which touches the remaining countries, then produced in Hektolitern Great Britain and Ireland: 45.000.000, Belgium: 7.866.000, France: 7.500.000, Russia: 2.214.000, Holland: 1.528.000 Hektoliter.

In the United States, where one itself end 19. Century only on the production of Porter and Ale, spreads slowly the brewery of Bavarian and Austrian beer places limited; were there already 1875 2,783 breweries actively.

Also in Brazil and in Japan individual breweries already existed in the last century; the brewery nature arrived over the German colonial commitment also into the Empire of China, this very day is actively the brewery in Tsingtao.

After the German-German reunification almost all east breweries of West German or foreign investors taken over, so for example the black beer brewery of the Bitburger brewery, the brewery potsdam of the citizens of Berlin Kindl brewery, the brewery Jena of Warsteiner brewery, the lock brewery Gotha of the Oettinger beer brewing house, the brewery Chemnitz of monk-yard-brew Kulmbach, the Bierbrauerei Wernigerode of the Gilde brewery Hanover etc.

Since center of the 1990er years the number of breweries remained to a large extent constant in Germany; 1995 gave it to 1,282 breweries. While the number of small breweries with up to 5.000 Hektoliter annual production, among which also the restaurant breweries rank, rose continuously (of 643 breweries 1995 on 782 breweries in the year 2002), sank the number of breweries with an annual production from 5,000 Hektoliter to 500,000 Hektoliter clearly from 585 in the year 1995 to 445 in the year 2002. The number of the large breweries with more than 500,000 Hektoliter remained to a large extent constant (54 in the year 1995, 52 in the year 2002).

In the year 1,279 breweries beer placed 2002 ago after the German purity requirement from 23 April 1516 according to data of the Federal Statistical Office in Germany (23 April is the day of the German beer). Half of the breweries (640) was in Bavaria (highest Brauerreidichte thereby in Upper Franconia), more than 100 breweries still gave it in Baden-Wuerttemberg (177 breweries) and North Rhine-Westphalia (119).
