Buffalo cheese is a cheese from the milk of buffalos (usually from water buffalo milk). Due to the special fat content (about twice as high as with cow's milk) and the other mineral material composition buffalo cheese deviates geschmacklich and in the consistency from comparable cheese made of cow's milk. In India for instance the cheese "Paneer" is manufactured from buffalo milk, in the Near East is common inserted buffalo cheese. Most well-known representative of the buffalo cheese is the Italian Mozzarella. A new development is a hard cheese named "Buffalo", which is in Great Britain since 1996 on the market and large popularity enjoyed.
